Korean Short Rib Tacos

Ingredients

  • 3 Short ribs
  • 1 Asian pear
  • 2 Kiwis
  • 1 Sweet onion
  • 2 Thai chilies
  • 1⁄4 cup mirin
  • 2 tbsp soy sauce
  • 2 cup of stock
  • 2 tbsp Infused Grapeseed Oil (25mg per tbsp)
  • Salt & pepper
  • Flour tortillas
  • Kimchi
  • Scallions

Instructions

  1. Heat a frying pan to medium heat and add oil (do not use the infused oil for this). Season short ribs with salt and pepper. Sear all sides of the short rib until golden brown.
  2. In a blender, add the pear, kiwis, onion, chillies, mirin and soy sauce. Puree until smooth. Coat the short ribs and marinate overnight in the fridge.
  3. Preheat the oven to 350 degrees. Add stock to a pot and bring to a boil.
  4. Place short ribs and marinade in a baking pan and pour in the boiling stock. Cover with tin foil and bake for 3.5 hours.
  5. Remove from the oven and take the short ribs out of the baking pan. Set aside.
  6. Pour the braising liquid into a pot and place it on the stovetop over medium-high. Reduce liquid by 2/3rds. Let cool, add infused grapeseed oil and blitz through a blender to fully emulsify.
  7. Using a fork pull short ribs apart into shredded meat. Place on a baking sheet and pour remaining braising liquid on top.
  8. Turn the oven on to broil HIGH and put the tray into the oven for 5 minutes on the top rack.
